DTS Retort Systems: Ensuring Commercial Sterility for Canned Food Safety

Commercial sterility is the foundation of the canned food industry. It ensures food safety and shelf stability by eliminating harmful microorganisms, including Clostridium botulinum spores and spoilage bacteria that can grow under ambient conditions.

To achieve this standard, sterilization processes must meet strict requirements. Temperatures typically exceed 121°C, while pressure must be carefully controlled between 15–20 psi to prevent package deformation. At the same time, temperature distribution must remain highly uniform, usually within ±0.3°C, to avoid cold spots that may compromise product safety.

Advanced and Gentle Thermal Processing

DTS adopts indirect heating combined with a multi-directional water spray system. Process water is heated through a heat exchanger and evenly distributed through 360° nozzles, forming a uniform water curtain around each container.

This approach ensures even heat transfer and avoids localized overheating, making it especially suitable for sensitive packaging such as glass jars.

Precise Temperature Control

Even under full-load conditions, DTS retorts maintain temperature variation within ±0.3°C, meeting FDA thermal distribution standards. This level of control ensures consistent F₀ values throughout the vessel and eliminates the risk of under-processing.

Programmable Heating Profiles

Multi-stage heating programs allow gradual temperature increase, reducing thermal shock and preserving product texture, flavor, and nutritional value—especially important for premium canned foods.

Energy Efficiency

Compared to traditional immersion systems, DTS water spray retorts significantly reduce water usage and lower steam consumption by approximately 30%, helping manufacturers reduce operating costs and environmental impact.
